cup all-purpose flour
1/2 teaspoon salt
3 tablespoons sugar
2 large eggs
3
tablespoons unsalted butter, melted
1 cup milk
1 Golden Delicious apple
1/4
teaspoon cinnamon
Preheat
oven to 425 degrees F. and generously butter a well-seasoned 10-inch cast iron
skillet.
Into a large
bowl sift together flour, salt and 1 tablespoon sugar add eggs, milk and butter
and whisk until well mixed.
Using
a 12 wedge corer/cutter cut the apple and peel the wedges. Cut each wedge lengthwise.
Toss the 24 wedges in a bowl with 1 tablespoon sugar and 1/4 teaspoon cinnamon.
Pour the batter into the skillet and arrange the apple wedges on top.
Bake for
20 minutes. Reduce temperature to 350 degrees F. and bake for 10 more minutes
or until edges have risen and puffed, pancake is golden and center is set.
Sprinkle
pancake with remaining tablespoon of sugar and serve immediately. Serves 2.
