1 large loaf or 4 smaller
loves - preheat oven to 350F
3 eggs
1 1/2 cup Canola Oil
1 1/2 cups
sugar
1 tsp. vanilla
Cream
above together. Add 2 unpeeled raw zucchini - coarse shred - and blend well.
Mix:
2-cups flour with - 2 tsp. baking soda
1
tsp. salt
3 tsp.cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
1
tsp. allspice
1tbls. dark cocoa
Add to zucchini mixture and blend well. Add 1 cup chocolate pieces (I prefer to
use a high grade semi-sweet cooking chocolate that I chop into pieces), add 1
cup nut pieces.
Pour
into greased pan(s) and bake for 1 hour & 10 min., or until done. Cool slightly
before removing from pans.
Note: Someof the chocolate chips will stick to the bottom of the pan -replace
them in the bottom of the bread. If you break up dark chocolate and use it in
lieu of chocolate chips, it WILL NOT stick to the bottom of the pan. Keeps indefinitely
in freezer and holds very well in the frige.
