2 cups flour 1 tbls. Baking
powder
1/2 tsp. salt 1/3 cup sugar
1-1/3 cup heavy cream 1/2 cup raisins
(optional)
Preheat oven to 425 degrees. Use an ungreased
baking sheet. Sift flour, baking powder, salt and sugar into a bowl. Add raisins
if you wish. Using a fork, stir in the cream and mix until the dough holds together
in a rough mass. Lightly flour a board and place the dough on top of it.
Knead the dough 8 or 9 times. Pat into a circle (or roll it) and, using a biscuit
cutter, cut rounds OR cut into wedges and place on baking sheet. Bake approximately
15 minutes or until golden brown.
Serve at tea with
strawberries and cream or breakfast with jam and unsalted sweet cream butter.
