Zucchini & Pecan Sour Cream Pancakes

1 1/3 cup milk
1 cup sour cream
2 eggs
2 Tbls. melted butter
2 cups pancake mix
1 cups grated zucchini
1/4 cup chopped pecans butter and warm maple syrup

In a large bowl combine the milk, sour cream, eggs, and melted butter. Mix thoroughly. Add the pancake mix and stir until just combined. The batter will be lumpy. Add the zucchini and pecans. Pour onto hot griddle or frying pan.
Cook until bubbles appear on the surface and the underside is golden. Turn once.
Sprinkle with powdered sugar.
Serve with plenty of butter and warm maple syrup. Serves 6 - 8.
