1/2 cup flour 1/2cup
milk
2 eggs pinch of nutneg
4 tbls. butter 2 tbls. powdered sugar
juice
of 1/2 lemon.
Beat eggs. Mix together
eggs, flour, milk and nutmeg. Melt butter on ovenproof 10” skillet.
Pour batter
into skillet with melted butter.
Bake at 425 degrees for 15 - 20 minutes.
Remove from oven and sprinkle with powdered sugar. Return to oven and bake briefly.
Remove from oven and sprinkle with lemon juice. Cut pancake into 4-6 pie-shaped
pieces and serve immediately with a variety of toppings such as lingonberries,
fresh strawberries, peaches, fruit preserves, and whipped cream. Serves 2-4.
